Recept | Healthy bounty

Hoe gaat het met de goede voornemens? Still going strong? Goed zo! Ik ook; les 6 van hardlopen met Evy is een feit, we eten en snacken gezond. Over dat snacken gesproken, ik heb een recept voor een healthy bounty!

Ja, het kan echt: een ge-zon-de chocoladereep. En no guilt needed, my girls! Dit recept is geïnspireerd op het recept dat ik op de Facebook-pagina van Fitdutchies vond. Dit is trouwens een toffe pagina om te volgen. Ik vond er namelijk ook een heerlijk recept voor kip-pesto. Superdelishhhhh. Oké, even terug naar de chocola. Ook dit recept is superlekker, en ziet er ook nog eens heel tof uit! Helemaal traktatieproof dus.

Wat heb je nodig?

+ 5 handjes amandelen
+ 12 dadels (zonder pit)
+ 140 gram kokosrasp
+ 2,5 eetlepels honing
+ 5 lepels gesmolten kokosolie
+ 225 gram pure chocola (80%)
+ vierkante plastic bak

Laag 1 (bodem): Snij de amandelen en dadels in kleine stukjes + doe ze vervolgens in de keukenmachine of blender en maal ze tot ze klein zijn + doe het vervolgens in een kommetje en voeg 2,5 eetlepel gesmolten kokosolie toe + schep het mengsel in de plastic bak en druk het goed aan + laag 2: vermeng de resterende 2.5 eetlepel gesmolten kokosolie met de honing en de kokosrasp + schep dit vervolgens op de eerste laag + verdeel dit evenredig en druk het goed aan + dan is het tijd voor de derde laag + smelt de chocolade au bain marie – schep dit op de laag met kokos en verdeel het gelijkmatig met een spatel + koel het mengsel een uur in de vriezer en je bounty is ready for eating! Enjoy!

How are the New Years resolutions going? Still going strong? Well done! Me too; Lesson 6 of running with Evy is a fact we are still eating and snacking healthy. Speaking about snacks, I have a recipe for a healthy bounty! 

Yes, it is really healthy. And no guilt needed, my girls! This recipe is inspired by the recipe I found on the Facebook page of Fitdutchies. This is actually a nice page to follow. I also found here a delicious recipe for chicken-pesto. Superdelishhhhh. Okay, let’s get back to the chocolate. Also this recipe is delicious, and it looks very pretty! Really treat-proof! 

What do you need?

+ 5 hands of almonds
+ 12 dates
+ 140 grams coconut rasp
+ 2.5 tablespoons of honey
+ 5 tablespoons melted coconut oil
+ 225 grams of dark chocolate (80%)
+ Square plastic holder

Layer 1 (bottom): Cut the almonds and dates into small pieces + then put them in the food processor or blender and grind them until they are small + put it in a bowl and mix it with 2.5 tablespoon of melted coconut oil + scoop the mixture in the plastic holder and press it well + layer 2: mix the remaining 2.5 tablespoon melted coconut oil with the honey and the coconut rasp + scoop this onto the first layer + divide this proportionately and push it well + then it is time for the third layer + melt the chocolate au bain marie – put this on the layer with coconut and spread it evenly with a spatula + cool the mixture in the freezer for an hour and your bounty is ready for eating! Enjoy!
